What do you do when you have 3 overly ripe bananas sitting on your kitchen counter?
Make some incredible nutty banana chocolate chip muffins, of course!!
I am so, so happy with how these little babies turned out. Especially because they are SUPER happy hormone healthy (no added sugar, unless you count those teeny choco chips ;)).
The natural sweetness of the bananas is all you need for these muffins + the enjoy life chocolate chips add the perfect chocolate-y touch.
Oh, and adding the pine nuts adds the best sweet crunch, too 😉
I am OBSESSED with enjoy life chocolate because they are both dairy and soy-free — a total win in the hormone department!
These muffins are perfect to pair with breakfast (just slather some more almond butter on top) or as a mid-day snack.

3 ripe bananas
3 tbsp coconut oil (I use the liquid specifically for baking!)
1/3 cup almond butter
1/3 cup coconut flour
1 tsp cinnamon or all spice
1 tsp baking soda
1/3 tsp baking powder
pinch of salt
1/4 cup pine nuts
1/3 cup enjoy life chocolate chips
I also squeezed some lemon juice in there for some zing
Bake at 350 for about 18-19 mins
Let them cool & ENJOY!
